Owners Keith and Lisa O’Connor are both natives of the Greenville area and graduates of Minisink Valley Central School District. While in high school, Keith worked in the Kitchen for the original owners of Carmine’s. After graduating from the Culinary Institute of America, Keith gained vast experience working at restaurants in Colorado, New York City, Warwick and Monroe.
Upon moving back to the area, he and Lisa decided to buy Carmine’s from his former bosses, Carmine and Georgette Scaglione. Today they are in their 20th year of business, and the restaurant name has finally changed to what they always wanted to call it. “The Chianti Cow”. Keith and Lisa have always loved Greenville and enjoy raising their family and running their business in a town where their roots were set at a very young age.
